Crispy Chicken with Sweet and Sour Sauce

Ingredients

  • 500g chicken breast strips
  • Salt and Pepper
  • 1 medium egg, beaten
  • 3 tbsp self-raising flour
  • 4 spring onions, thinly sliced
  • For the sweet and sour sauce
    • Low-calorie cooking spray
    • 1 white onion, peeled and sliced
    • 120g baby corn, sliced widthways
    • 100g sugar snap peas, halved
    • 1 garlic clove, peeled and crushed
    • 5cm fresh ginger, grated
    • 2 carrots, cut into thin strips
    • 1 green pepper, thinly sliced
    • 1 red pepper, thinly sliced
    • 1 small red onion, thinly sliced
    • Juice of 1 lime
    • 2 tsp light soy sauce
    • 2 tbsp rice vinegar
    • 1 tbsp Henderson's relish
    • 1/2 tsp hot sauce
    • 100ml chicken stock
    • 1 tsp honey
    • 160g peeled pineapple, diced
    • 5g cornflour

    • 50g nest of dried egg noodles per portion, cooked according to packet instructions
