Ingredients
120g wholemeal bread
1/2 tsp garlic granules
1/4 tsp chilli powder (hot or mild, depending on taste)
1/2 tsp salt
300g chicken
1 egg
low-calorie cooking spray
Method
Preheat the oven to 170C
Line a baking tray with greaseproof paper
In a mini electric or food processor, blitz the wholemeal bread into fine crumbs
Place into a shallow dish with the garlic granules, chilli powder and salt and mix well
Dice the chicken into bite-sized pieces
Beat the egg in a bowl and add the diced chicken, stirring to ensure the chicken is coated in egg
Put the chicken into the breadcrumbs, a few pieces at a time
Shake the chicken around in the breadcrumbs to coat and place each piece onto the baking tray
Repeat until all the chicke is coated in breadcrumbs
If you have any breadcrumbs left over, dip the breaded chicken into the egg again, then back into the crumbs for an extra crispy coating
Spray the chicken with low-calorie cooking spray and pop in the oven for 20-25 minutes until golden and the chicken pieces are cooked through
