Ingredients
- Low-calorie cooking spray
- 300g diced chicken
- 2 bell peppers, deseeded and diced
- 1 onion, peeled and finely diced
- 2 celery sticks, sliced
- 2 garlic cloves, peeled and minced or finely chopped
- 1-2 tbsp cajun seasoning
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 200g long grain rice
- 400g tin chopped tomatoes
- 400ml chicken stock (2 chicken stock cubes dissolved in 400ml boiling water)
- 1 tbsp Worcestershire sauce
- 3 cooked sausages, sliced
