Ingredients

  • Low-calorie cooking spray
  • 300g diced chicken
  • 2 bell peppers, deseeded and diced
  • 1 onion, peeled and finely diced
  • 2 celery sticks, sliced
  • 2 garlic cloves, peeled and minced or finely chopped
  • 1-2 tbsp cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 200g long grain rice
  • 400g tin chopped tomatoes
  • 400ml chicken stock (2 chicken stock cubes dissolved in 400ml boiling water)
  • 1 tbsp Worcestershire sauce
  • 3 cooked sausages, sliced
